This keto-friendly and gluten-free recipe, made with cauliflower and vegetables, is a great alternative to your ordinary fried rice!
Ingredients
9 OZ / 250 G cauliflower
2 TBSP vegetable oil
1 TBSP salt
3.5 OZ / 100 G mixed frozen carrot, peas, sweetcorn
10.5 OZ / 300 ML water
Directions
Cut the cauliflower into florets and place it into the mixing bowl. Chop for 4 seconds / speed 5. Use the spatula to scrape down the sides of the mixing bowl.
Then chop again for 3 seconds / speed 5.
Add the water. Sauté your cauliflower for 8 minutes / 250°F|120°C. Remove from the mixing bowl and strain the excess liquid from the cauliflower.
Add your cauliflower back to the mixing bowl along with your oil, salt and frozen vegetable mix. Sauté the cauliflower rice for 10 minutes / 250°F|120°C.
Serve with a fried egg as an option. Enjoy your dish!
