Bacon Cauliflower Rice

1. Prepare cauliflower.

The most common type is white cauliflower. You can gauge its freshness by its bright white color, making sure it has no dark spots. You can also find orange, green, and purple cauliflower that cook similarly and can be used the same way.

There is also Romanesco cauliflower which is green and resembles broccoli in look and taste. It can also be used in this recipe, but may result in a slightly different flavor.

2. Sauté bacon.
