Nectarines are right in season and making this Bellini recipe can not be any easier. It is perfect for your garden party or just having it as you finish off your day.
Ingredients
4 EA nectarines
1 OZ / 25 G sugar
70.5 OZ / 2000 ML hot water
1 BOTTLE prosecco
Directions
Add your hot water to the mixing bowl and boil the water for 5 minutes / 265°F|130°C / speed 1 / stir. Whilst your water is boiling, carefully cut a cross in the top of the nectarine. Prepare an ice bath for the fruit.
Add the fruit to the simmering basket, then insert into the mixing bowl. Make sure the water is fully submerging the fruit. Blanch the fruit with the measuring cup in place for 2 minutes / 265°F|130°C / speed 1 / stir. Once done, carefully remove the simmering basket and place the nectarines in the ice bath. Allow to cool. Rinse out the mixing bowl.
Peel the skin from the nectarine, then cut the fruit in half. Remove the stone. Add the fruit to the mixing bowl along with the sugar. Blend the mix to a smooth puree for 30 seconds / speed 7. Remove from the mixing bowl and reserve for later.
Add some of your puree into the base of a fluted glass and then top with some prosecco. Any leftover puree can be stored in the fridge.
Enjoy your drink! You can do the same with peaches or plums for this recipe. Make sure you taste the puree for adequate sweetness.
