1 EA vanilla bean, seeds scraped out
17.5 OZ / 500 G milk
10.5 OZ / 300 G heavy cream
6 EA egg yolks
2 OZ / 50 G sugar
5 OZ / 140 G maple syrup
3 OZ / 80 G pecan nuts
Directions
Add vanilla bean, vanilla seeds, milk, cream, egg yolks, sugar and maple syrup to the mixing bowl and warm for 8 minutes / 190°F|90°C / speed 2. Remove the vanilla bean.
Pour the ice cream mixture into a shallow freezer container, cover and cool completely. Freeze for 10 hours in the freezer.
Add the pecans to the mixing bowl and toast for 3 minutes / 230°F|110°C / speed 1 then allow to cool.
Place the frozen ice cream mixture in the refrigerator for 15 minutes, and then cut into cubes using a sharp knife. Add half the cubes to the mixing bowl and crush for 20 seconds / speed 6.
Remove the measuring cup and place the spatula to the lid opening. Mix until creamy for 10 seconds / speed 4 and pour into a freezer container.
Add the remaining ice cream cubes to the mixing bowl and chop for 20 seconds / speed 6.
