Dare to try this tasty beef recipe with the unique taste of coffee with some gentle heat from the chipotle in adobe sauce.
Ingredients
6 EA beef cheeks
8 OZ / 225 ML strong coffee
1 EA onion
17.5 OZ / 500 ML beef stock
1 EA chipotle chili in adobo sauce
2 TSP salt
2 TSP pepper
2 TBSP corn flour
2 OZ / 50 ML water
Directions
Sear your beef cheeks in a hot pan for around 5 minutes on either side, allowing it to brown on all sides.
Quarter your onion and add to the mixing bowl along with the beef cheeks, coffee, stock and chipotle chili. Cook your beef with the measuring cup inserted for 1 hour 39 minutes / 200°F|95°C / speed 1 / stir.
Add some salt and pepper to the mixing bowl then cook again for 1 hour / 200°F|95°C / speed 1 / stir.
Once cooked, remove the beef cheeks and set to one side. Mix your corn flour and water together then pour into the sauce through hole. Cook the sauce for 5 minutes / 230°F|110°C / speed 3 / stir.
