Juicy salmon burgers topped with a sweet and hot fruit salsa are a flavor-filled healthy option.
Ingredients
4 OZ/ 120 G mango
7OZ / 200 G fresh pineapple
0.5 EA habanero pepper
1 TBSP lime juice
1.5 TSP fine sea salt, divided
0.5 EA avocado
1 EA jalapeño
10 EA cilantro sprigs
4 EA green onions
24 OZ / 680 G salmon fillet
2.5 OZ / 65 G dry breadcrumbs
1 TSP ground cumin
1 TSP dried oregano
1 TBSP vegetable oil
4 EA hamburger buns, lightly toasted
8 TSP mayonnaise
Directions
Peel and pit mango. Cube mango and pineapple, add them to the mixing bowl. Remove stem from habanero and halve it. Finely chop half of the habanero and save the other half for another use. We recommend using gloves while working with hot peppers.
Add lime juice and salt to the mixing bowl and chop for 5 seconds / speed 5.
Remove the pit from the avocado half and add into the mixing bowl, chop for 5 seconds / speed 5. Transfer salsa to another bowl and cover with plastic wrap and refrigerate until needed. Rinse and dry mixing bowl.
Remove stem and seeds from jalapeño and roughly chop. We recommend using gloves while working with hot peppers. Cut cilantro sprigs into thirds. Cut green onions into pieces. Add jalapeño, cilantro, and green onion to mixing bowl and chop for 6 seconds / speed 6. Use spatula to scrape down the sides of the bowl.
Cut about 1/3 of the salmon into chunks. Make sure salmon fillet is boneless and skinless. Add salmon chunks, breadcrumbs, cumin, dried oregano, and remaining 1 teaspoon salt to the mixing bowl. Process for 10 seconds / speed 8. Use spatula to scrape down the sides of mixing bowl.
Cut remaining 2/3 of salmon into chunks, add salmon to mixing bowl. Process for 6 seconds / speed 6. Form salmon mixture into 4 patties and place on a plate. In a large non-stick skillet heat oil over medium heat. Add burgers and cook, flipping once, until browned and cooked through for 8-10 minutes (internal temperature should reach 145°F|65°C).
Spread insides of buns with mayonnaise. Top bottom buns with salmon burgers. Top each salmon burger with a big spoonful of pineapple salsa. Place tops of buns on top.
