Celebrate the day of the dead with this beautiful, sweet bread.
Ingredients
17.5 OZ / 500 G bread flour
2 OZ / 50 G butter
1 OZ / 25 G light brown sugar
1 TSP salt
2 EA eggs
3 TSP yeast
9 OZ / 250 ML milk
2 EA orange zest
1.5 TSP ground anise
3.5 OZ / 100 G sugar
3.5 OZ / 100 G melted butter
Directions
To activate the yeast, add your milk, yeast and light brown sugar to the mixing bowl. Mix for 2 minutes / 99°F|37°C / speed 1.
Then add 1 egg, bread flour, orange zest, ground anise, butter and salt to the mixing bowl. Knead for 1 minute.
Check your dough for the consistency, then add more water or flour depending on the desired consistency. Knead again for 1 minute.
If necessary, knead in a little more flour or water until it reaches the right consistency. Take the dough out, shape it into a ball and put it into a bowl covered by a tea towel and allow the dough to prove for at least 1 hour until it has doubled in volume. Clean the mixing bowl.
Lightly flour a work surface and empty the dough onto it. Remove a quarter of the dough for the bones, and shape the remaining into a ball, then flatten slightly. With the remaining bread, make the bone shapes then decorate the bread. Place onto a baking sheet and allow to proof for an hour.
Preheat your oven to 180°C / 360°F. Glaze with the remaining beaten egg, then bake in the oven for 30 minutes till golden.
Brush your melted butter over the bread carefully while still hot, then sprinkle the sugar over the top.
