Ingredients
0.5 EA yellow onion
2 CLOVES garlic
3 EA tomatoes
1 EA serrano pepper
17.5 OZ / 500 G tilapia fish fillets
1 TSP salt
0.5 TSP pepper
5 SPRIGS cilantro leaves
1.5 OZ / 40 ML olive oil
8 EA tortillas
2 TBSP vegetable oil
0.5 EA avocado
1 EA lime
8 OZ / 225 G mexican sauce (any)
Directions
Peel your onion and garlic. Add the onion, garlic, tomatoes and serrano pepper to the mixing bowl. Chop all the ingredients with the measuring cup inserted for 45 seconds / speed 8. Scrape down the sides.
Pour olive oil into the mixing bowl. Using the sauté mode , sauté your vegetables with the measuring cup inserted for 5 minutes / 230°F|110°C.
Roughly cut the fish into chunks. Add tilapia, cilantro, salt and pepper into the mixing bowl. Cook in sauté mode with the measuring cup removed for 8 minutes.
Chop the fish for 10 seconds / speed 2 / stir.
Fill tortillas with the fish mixture and then fold over in half.
TIP: Warm up the tortillas beforehand, so they do not break. Use double tortilla if necessary.
Fry them in hot oil for 3 minutes or until they are crispy and golden. Remove the excess oil using paper towels.
Garnish quesadillas with lime juice, avocado and your favorite Mexican sauce. Enjoy your snacks!
