Wafer thin, golden crepes perfect for breakfast can be stuffed with something sweet or savory.
Ingredients
5.5 OZ / 150 G all purpose flour
0.75 OZ / 20 G sugar
2 EA eggs
0.25 TSP vanilla
1.75 OZ / 50 G butter
0.25 TSP salt
7 OZ / 200 G milk
Directions
Add half of butter in the mixing bowl and melt for 2 minutes / 165°F|75°C / speed 2.
Add the egg, vanilla, salt, sugar and flour into the mixing bowl and mix for 20 seconds / speed 3.
Use spatula to scrape down sides of mixing bowl. Remove the measuring cup then slowly add the milk a little at a time through the hole until smooth while the machine is running for 3 minutes / speed 2.
Using a non stick pan over a medium heat, lightly coat the pan with a little but of the remaining butter.
Pour a small ladle of the batter into the pan. Make sure you spread it evenly across the pan.
After 30 seconds carefully flip the crepe and repeat the cooking on the other side.

Recipe Note
TIPS:
If the mix is too thick add more milk.
Make sure you keep an eye on the heat if the crepe gets to brown.
Convert this recipe to pancakes by adding a tsp of baking powder and reduce the milk content.
