Cut shallot into quarters, then peel and cut out the root end. Add shallot to mixing bowl with the bacon. Chop for 4 seconds / speed 7. Use spatula to scrape down the sides of the bowl.
Add the ground beef to the mixing bowl. Using the spatula, evenly distribute the beef on the base of the mixing bowl. Remove the measuring cup and sauté for 5 minutes / 265°F|130°C.
Mix the beef with your spatula and sauté again for 3 minutes / 265°F|130°C.
Drain both beans in simmering basket, then rinse. Add stock, smoked paprika, brown sugar, vinegar, worcestershire sauce, mustard, tomato paste, salt and cayenne to mixing bowl. Cook with the measuring cup removed for 10 minutes / 212°F|100°C / speed 1 / stir.
Add the beans to the mixing bowl. Mix for 4 minutes / 212°F|100°C / speed 1 / stir.
Enjoy your dish! You can use any leftover meat for this. Pulled pork is also awesome.
