Add coconut oil to mixing bowl. Melt for 1 minute / 175°F|80°C / speed 1.
Cut dates into 1.25cm (½-inch) pieces.
Add dates, cashews, coconut, agave, cinnamon, vanilla, and salt to the mixing bowl.
Process for 8 seconds / speed 10.
Scrape down sides of mixing bowl. Process for 8 seconds / speed 10.
Use a teaspoon to portion the mixture, then roll each portion into a ball.
Roll the balls in shredded coconut.
Store refrigerated in an airtight container.
